Addie’s Peanut Butter Chocolate Chip Cookies

 

1 1/2 Cups all purpose flour                                      1 tsp. baking soda
1 Cup (2 sticks) butter, softened                               1/2 cup peanut butter
1/2 cup granulated sugar                                           1 large egg 
1 tsp. vanilla extract                                                   Granulated sugar
1 3/4 cups chocolate chips                                        1/2 cup packed brown sugar
 
Preheat oven to 375 F.
 
Combine flour and baking soda in small bowl.  Cream butter, peanut butter, granulated sugar, brown sugar, and vanilla extract in large mixing bown until creamy.  Beat in egg.  Gradually add flour mixture.  Stir in chocolate chips.
 
Once dough is complete, scoop by teaspoon and roll into balls.  Roll each ball in extra granulated sugar.  Place on cookie sheet, spacing each cookie two inches apart.  Flatten each ball with a fork.
 
Bake 8 to 10 minutes or until edges are set but centers are still soft.  Remove from oven and let sit for 3 – 4 minutes.  Move to wire racks to cool completely.
 
Yeilds:  3 1/2 dozen cookies
